اعادة تأهيل قصر دويك كمطعم تراثي فلسطيني

Abstract

الهوية، الحضارة، التراث، التاريخ الزماني والمكاني، كلها مصطلحات تمر على أذهاننا مئات المرات قراءة في مجالت وأبحاث، وسماعا في خطابات واحتفاالت، ولكن اذا ما أردنا أن نضع هذه المصطلحات في مركب واحد ونسيره نحو العمل الدؤوب من أجل أن تتحقق هذه الكلمات واقعا عمليا ال نظريا، فنحافظ على هويتنا ونبني حضارتنا ونحمي تراثنا ونعيد لحاضرنا ومستقبلنا ماضينا الجميل الزاخر بكل ما هو أصيل. لذلك جاء مشروع المطعم من باب الحفاظ على المطبخ الفلسطيني العريق ليكن وجها من أوجه المقاومة الفلسطينية التي تتعدد أسبابها وطرقها ولكنها تخدم هدفا واحدا أوحد. يجذب بفراغاته وطريقة ترتيبها، وسحر األجواء الريفية التي عاشها الفالح الفلسطيني ببساطتها لتشكل جوا فريدا من نوعه في أروقة المطعم يجلب كل من يمر بحذو هذا المطعم، فتستدعيه رائحة الطعام وسحر األجواء فيخيل اليه حاجة بثوب فلسطيني أصيل تعد المرق واللحم في قدر نحاسي على نار ملتهبة تشعل معها كل الحنين الى األصالة، فيأبى أن يفارق الوطن والديار أبدا ما عاش. من أجل هذا كله استند البحث على العديد من الدراسات النظرية، وغيرها العملية المطبقة في أغلب البيوت الفلسطينية، فقدم بحثا شامال موسعا عن المطبخ الفلسطيني بأدواته ووسائل االعداد وأنواع األكالت المعدة، كما أن البحث اشتمل على دراسة حالتين دراسيتين محليتيتن لالستفادة قدر االمكان من التجارب المحلية في هذا االطار، وتم دراسة المعايير التصميمية والتخطيطية للمطاعم بوجه عام، واسقاطها على متطلبات وأهداف المشروع من أجل اعداد برنامج للمشروع يوضح الفراغات ومساحاتها المطلوبة، ومن ثم تم ادراج اقتراحين لموقعين من األراضي ليقام المشروع على واحدة منهما اختيرت بالمفاضلة بحيث تلبي احتياجات ومتطلبات المشروع،والتي تعتبر الخطوة االولى على طريق تصميم المشروع، وأخيرا تم التوصل الى مجموعة من النتائج والخروج بتوصيات من الضروري األخذ بها . Identity, civilization, heritage, temporal and spatial history are all terms that pass through our minds hundreds of times in magazines and research, in speeches and celebrations. If we want to put these terms in one hand we should work hard in order to make it real instead of being theoretical. To serve our identity, build our civilization, protect our heritage and restore our present and future to our beautiful past, with all that is inherent. Therefore, the restaurant project came out of the preservation of the old Palestinian cuisine to be one of the aspects of the Palestinian resistance, which have many causes and methods, Which serve one goal and only. And the magic of the rural atmosphere lived by the Palestinian peasant simplicity to form a unique atmosphere in the corridors of the restaurant brings everyone who passes by the restaurant, the smell of food and the charming atmosphere will let each person who comes by the restaurant imagine an old Palestinian woman who is cooking the gravy and meat in a copper pot on a blazing fire. As a result, he or she won’t leave his or her homeland no matter what. For this purpose, the research was based on many theoretical studies, and others, the process applied in most Palestinian homes. It provided comprehensive research on the Palestinian kitchen with its tools, preparation methods and types of prepared food. The research included studying two local study cases to benefit as much as possible from local experiences. The design and planning criteria for restaurants were examined in general and dropped to the project's requirements and objectives in order to prepare a project program that clarifies the spaces and their required areas. Hence, two proposals were submitted for two land sites to be built on one of the selected ones Which is considered the first step in the design of the project. Finally, a set of results has been reached and recommendations made necessary.
